What you need:
Protein Balls
300g nuts (we used cashews, almonds & walnuts)
60g Protein powder (we used Natural Whey Protein)
10 Dates
2 tbsp Organic raw Cacoa
2 tbsp Organic Coconut Oil
1 tsp Organic Vanilla Bean paste
Pinch of Pink Himalayan Rock Salt
Icing
1 cup of cashews/macadamia nuts – soaked in water for around 2 hrs & then drained
1-2 tbsp Organic Coconut Oil
¼ cup Shredded Coconut
Natural sweetener of your choice (Rice Bran Syrup, Maple Syrup, Raw Honey, Stevia, Vanilla Bean Paste) – to taste
Dried Cranberry or pomegranate seeds & mint leaves to decorate
Method:
Protein Balls:
Add all ingredients for the protein balls to a food processor/Thermomix – blend on high speed in bursts of around 20 secs, scrape down sides & repeat until until all combined
Roll into balls
Cool in fridge & make icing
Makes approx. 12
Icing:
Put all the ingredients for the icing in a food processor/Thermomix – blend on high speed again in 20 sec bursts, scrape down the sides & repeat until smooth
Cool in fridge for approx. 20 min or until it thickens
Dip protein balls in icing & top with a cranberry or pomegranate seed & mint leaf
Keep refrigerated & ENJOY!!!
